Cod, Avocado, Tomato, Jalapeno, Egg scramble: Made this one up this morning since the fish wasn’t getting any fresher. Heated up some olive oil, chopped up the fish, and fried it with salt and pepper. Part way through, I added minced jalapeno and dill, then cracked two eggs in and scrambled it up. At the end, I added some diced tomato and avocado. Serve with a garnish of paprika and cayenne pepper.
