Here it is folks, what is considered by many to be the best pork dish in the entire world. It’s called babi guling, and seeing how Indonesia is the most muslim anti-swine country in the entire world, it’s amazing that its only Hindu island of Bali would cultivate such an F-you dish.
Babi guling can be found all over Bali, but the most famous spot is called Ibu Oka, located right in the heart of Ubud. Every morning the people that own Ibu Oka take a bunch of pigs at their home and load their bellies up with tapioca leaves and spices and roast the fuckers over an open flame until the skin is crispy and the meat tender. Oh, they also baste the thing with sweet coconut water while it roasts for 6 hours. They then take these perfect pigs to their restaurant, and do a breakfast/lunch serving until the crispy guys are sold out (usually happens around 1 or 2 pm, I recommend going at 10:30am).
A lot has been said and hyped about the dish, but in all honesty I’ve never tasted pork in my life that had the amazing sweetness of babi guling’s meat. I can still taste it, and it’s probably one of my favorite things I’ve ever had.
